Hello! Welcome to my Go-To Healthy Meal Series … this is meal #2 … a fantastic salad filled with veggies, protein, and healthy fats (okay, and bacon, which isn’t a health food, but a girls gotta live a little)!
This lunch is a great option when you need to do the majority of your prep work ahead of time. The chicken, bacon, corn, and cucumbers can all be cut ahead of time, stored in separate containers, and then tossed into a salad in flash. I generally bake a batch of chicken breasts and chop up frequently used fruits and vegetables on the weekend, so they’re ready for a quick meal or snack during the week. And this particular recipe really is as simple as taking a boatload of vegetables and protein, tossing it on a plate or into a to-go container, and getting on with your life.
Add some fresh berries and dark chocolate (at least 60% cocoa) and you’ve got a wonderfully flavorful, balanced meal, with some sweet antioxidants as your finale.
So here’s how we make the magic happen:
Toss together the following ingredients and add a dressing of your choice. I always prefer a vinaigrette (Panera’s Greek dressing is fantastic with this salad):
- Mixed greens
- 4 oz diced baked chicken breast
- 1-2 pieces of cooked bacon
- 1/4 feta cheese
- small handful of cherry tomatoes
- 1/4 chopped cucumber
- 1/2 cup beets
- 1/4 cooked corn
- 3-5 diced olives
- 1-2 Tbsp pine nuts
