Halloween is over, Thanksgiving is upon us, and then the steady march to Christmas! If you’re like me you have left over pumpkins, and a busy social calendar ahead! So, what’s a girl to do? Well, I don’t like to show up at parties, dinners, or social gatherings empty handed … ever. So, I always have a few super-easy, quick, and tasty recipes at my fingertips … something I can whip up in a flash and go!
This pumpkin spice bread is one of my go-tos. It’s easy, bakes in an hour, and smells and tastes heavenly, invoking all those wonderful fall feels. So, I thought I’d share! Let me know how you like it! Happy baking (and socializing)!
Ingredients:
2 cups unsifted, all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
2 cups sugar
3/4 cup butter, softened
2 eggs
1 16 oz. can pumpkin
Make It:
Preheat oven to 325.
Lightly grease two 9 X 5 inch loaf pans.
Combine the flour, salt, baking powder, baking soda, and spices — whisk together well and set aside.
In a separate bowl, combine the butter and sugar, and mix using an electric mixer until just combined (slightly crumbly).
Add the eggs, one at a time, and beat until fully combined and fluffy.
Add the pumpkin and beat until combined.
Add the flour mixture and beat on low speed until just combined.
Add mixture to two loaf pans, and bake in oven for 65-75 minutes, or until a cake tester comes out clean.
Let cool (at least slightly — but not too much, I prefer mine warm), and enjoy!
